- 1 can red kidney beans
- 1 can diced tomatoes
- 1 can lentils
- 1 can pinto beans
- 1 can black beans
- 1 brown onion, diced
- 1 red capsicum, diced
- 1 red chilli, finely sliced
- 1 tsp paprika
- 1/4 tsp gourmet vegeta stock (vegetables stock)
- 1 cup boiling water
- 3 tsp garlic
- In a pot on medium heat sauté onion and garlic until aromatic.
- Add red capsicum cook for a further 2 minutes until softened
- Add tomatoes, lentils, pinto beans, red kidney beans, black beans and paprika. Stir to combine
- Combine vegeta with boiling water and add to bean mixture.
- Reduce heat to low and let simmer for 15-20 minutes until liquid has reduced slightly.
- Remove from heat serve with rice or tortilla chips and enjoy!
