Low Fodmap Prawn Paella
Pescatarian, heart healthy (low in saturated fat), high in omega 3 fatty acids, low FODMAP, toddler and kid friendly

Ingredients
- 400 g tin diced tomatoes
- 1 tb tomato paste
- 1/2 tsp turmeric
- Few saffron threads
- 2 cloves garlic, peeled (do not crush)
- 300 g Arborio rice
- 2 cups frozen prawns
- 2 cups halved green beans
- 1 cup frozen peas
- 1 cup baby spinach
- Olive oil
- 750 ml water
- Salt to season
Method
- In a large frypan, heat olive oil and garlic on high until aromatic
- Add tomatoes, tomato paste, spices, rice and water to pan. Bring to boil and then reduce heat to low. Simmer for 25 min or until rice tender and liquid absorbed
- Top rice mixture with prawns, peas, green beans and cover with a lid. Cook for a further 7-8 minutes or until prawns and beans are tender.
- Turn off heat, stir through baby spinach leaves and serve warm. Remove garlic cloves before serving.
