5 Ingredient Low Fodmap Banana Muffins

low FODMAP, heart healthy (low in saturated fat)

Ingredients

  • 3 ripe bananas
  • 1 1/4 cup oats
  • 1/4 cup peanut butter
  • 1 tsp vanilla extract
  • 1/2 cup dark chocolate chips

Method

  1. Preheat oven to 180 degrees celsius. Grease a muffin pan or line with cupcake liners.
  2. In a large bowl, mash ripe bananas. Mix in oats, peanut butter and vanilla until well combined. Fold in dark chocolate chips (optional: reserve some chocolate chips to add to the top of the mixture as long as the chocolate content in each muffin is less than 30g).
  3. Pour mixture into muffin pan, using a spoon to smooth out on top. bake for 25-30 minutes, until a knife inserted the centre comes out clean.
  4. Let cool. Store in an airtight container in the fridge for 3-5 days.
  5. Enjoy
