Apple and Cinnamon Muffins

Heart healthy (low saturated fat), vegetarian

Ingredients

  • 2 cups plain flour
  • 1 tablespoon baking powder
  • 2 teaspoons ground cinnamon
  • 3 apples, cored, peeled and chopped
  • 125ml grape-seed oil
  • 2 eggs
  • 3/4 cup reduced fat milk
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract

Method

  1. Preheat oven to 180 degrees fan-forced. Line muffin tray with muffin cases.
  2. In a large bowl sift plain flour, baking powder and cinnamon. Mix until combined.
  3. Add the chopped apples and brown sugar to flour mixture and stir until combined.
  4. In a separate bowl add grape-seed oil, eggs, milk and vanilla extract whisk until well combined.
  5. Add liquid mixture to flour mixture and fold gently until just combined.
  6. Spoon mixture evenly across 14 muffin cases.
  7. Bake in pre-heated oven for 20 minutes or until muffins are golden and cooked through.
  8. Leave to cool on a wire rack.
  9. Enjoy!
