Apple Crumble

Ingredients
Apple filling:
- 6 apples, diced
- 1 orange, juiced
- 1 tsp brown sugar
- 1 tsp vanilla extract
- 1/2 tsp corn starch
- 1/2 tsp cinnamon
Topping:
- 1 cup oats
- 1/4 cup almond meal
- 1/4 cup nuts or seeds of choice
- 2 tbsp maple syrup
- 1 tbsp olive oil
Method
- Pre-heat oven to 180 C
- Place apples, orange juice, vanilla, sugar and cinnamon in a small pot and toss to combine
- Cook over low-medium for 5-10 mins or until apples have started to soften.
- Stir in corn starch to thicken the liquid.
- Transfer apples to an ovenproof baking dish.
- Place all topping ingredients in a bowl, mix well to combine. Scatter evenly on top of apple mixture.
- Bake for 15 minutes or until topping is golden brown
- Serve warm with low-fat Greek yoghurt or 1 scoop low-fat ice-cream for a delicious dessert. Lasts up to 5 days in the fridge.
Top Tip: Add some extra nuts or seeds and bake the topping ingredients alone on a baking tray for 15mins at 180 C to make a maple granola. Makes for a great breakfast option.
