Apple Crumble

Ingredients

Apple filling:

  • 6 apples, diced
  • 1 orange, juiced
  • 1 tsp brown sugar
  • 1 tsp vanilla extract
  • 1/2 tsp corn starch
  • 1/2 tsp cinnamon

Topping:

  • 1 cup oats
  • 1/4 cup almond meal
  • 1/4 cup nuts or seeds of choice
  • 2 tbsp maple syrup
  • 1 tbsp olive oil

Method

  1. Pre-heat oven to 180 C
  2. Place apples, orange juice, vanilla, sugar and cinnamon in a small pot and toss to combine
  3. Cook over low-medium for 5-10 mins or until apples have started to soften.
  4. Stir in corn starch to thicken the liquid.
  5. Transfer apples to an ovenproof baking dish.
  6. Place all topping ingredients in a bowl, mix well to combine. Scatter evenly on top of apple mixture.
  7. Bake for 15 minutes or until topping is golden brown
  8. Serve warm with low-fat Greek yoghurt or 1 scoop low-fat ice-cream for a delicious dessert. Lasts up to 5 days in the fridge.

Top Tip: Add some extra nuts or seeds and bake the topping ingredients alone on a baking tray for 15mins at 180 C to make a maple granola. Makes for a great breakfast option.
