Beef And Lentil Rogan Josh Meatballs Baked In Saffron Yoghurt

Serves 4

Ingredients

  • 400g tin lentils
  • 1 cup baby spinach, torn
  • 500g lean beef mince
  • 2 Tbsp good quality Rogan Josh paste
  • 250ml light Greek yoghurt
  • Pinch of saffron.

Method

  1. Combine mince, lentils, spinach and Rogan josh paste in a large mixing bowl and knead until well combined.
  2. Fashion into approximately 14 balls (about golf ball size) and place in a baking tray approximately 25 x 15 cm
  3. In a glass mixing jug, combine yoghurt, 250 ml water and saffron and stir until combined.
  4. Pour mixture over meatballs in baking dish and place in oven on top shelf (170 degrees on fan grill).
  5. Cook until meatballs are browned on top and yoghurt starts to thicken.
  6. Serve and Enjoy!
