Beef And Lentil Rogan Josh Meatballs Baked In Saffron Yoghurt

Ingredients
- 400g tin lentils
- 1 cup baby spinach, torn
- 500g lean beef mince
- 2 Tbsp good quality Rogan Josh paste
- 250ml light Greek yoghurt
- Pinch of saffron.
Method
- Combine mince, lentils, spinach and Rogan josh paste in a large mixing bowl and knead until well combined.
- Fashion into approximately 14 balls (about golf ball size) and place in a baking tray approximately 25 x 15 cm
- In a glass mixing jug, combine yoghurt, 250 ml water and saffron and stir until combined.
- Pour mixture over meatballs in baking dish and place in oven on top shelf (170 degrees on fan grill).
- Cook until meatballs are browned on top and yoghurt starts to thicken.
- Serve and Enjoy!
