Brownie Bliss Balls

Ingredients

  • 1 cup rolled oats
  • 2/3 cup almond meal
  • 1/3 cup pepitas (or seeds of choice)
  • 1/2 cup dates
  • 1/4 cup maple syrup
  • 2 tbsp cocoa powder + extra for dusting (opt) 1 tbsp chia seeds
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Method

  1. Soak dates in boiling water for 5 mins. Drain water. Blend dates in a food processor until smooth.
  2. Add all remaining ingredients to the food processor and blend until the mixture forms a slightly-sticky, dough-like consistency. If the mixture is dry add 1 tsp of water. If the mixture is too wet add in extra almond meal.
  3. Using your hands, roll a mixture into a ball (1 tbsp per ball). Roll in extra cocoa powder if desired.
  4. Enjoy! Store in an air-tight container in the fridge for up to 5 days. Pop them in the freezer to make them extra fudgy.
