Fish Tacos

Low Sodium, Low carbohydrate, diabetic friendly, low calorie

serves 4

Ingredients

  • 4 flour tortillas
  • 400g white fish
  • 1 x tin corn kernels (no added salt or sugar)
  • 1/4 red cabbage, finely shredded
  • 1 avocado, mashed
  • 1/2 red onion
  • 1/4 cup coriander leaves, chopped
  • 1.5 tbsp lime juice
  • 1.5 tbsp extra virgin olive oil
  • 2 tablespoons reduced fat yoghurt
  • Lime cheeks, to serve
  • Fresh coriander leaves, to serve
  • 20ml sriracha Mayo or chilli sauce (to serve)

Fish seasoning:

  • 1.5 tsp Chilli powder
  • 1.5 tsp Cumin
  • 1.5 tsp Garlic powder
  • 1.5 tsp Paprika

Method

  1. Preheat oven to 200 degrees. Line a baking tray with baking paper.
  2. In a bowl add the cabbage, extra virgin olive oil and 1 tbsp lime juice. Mix until well combined.
  3. In a separate bowl, combine the avocado, coriander, red onion and remaining lime juice. Mix until well combined.
  4. In a bowl combine spices and cost fish strips. Place fish on prepared baking tray.
  5. Bake in pre heated oven for 10 minutes turning half way.
  6. Top the tortillas with cabbage mixture, corn, fish, avocado, yoghurt, coriander and chilli. Drizzle sriracha mayo over the tortillas.
  7. Serve with lime cheeks and enjoy!!
