Fish Tacos
Low Sodium, Low carbohydrate, diabetic friendly, low calorie
serves 4
Ingredients
- 4 flour tortillas
- 400g white fish
- 1 x tin corn kernels (no added salt or sugar)
- 1/4 red cabbage, finely shredded
- 1 avocado, mashed
- 1/2 red onion
- 1/4 cup coriander leaves, chopped
- 1.5 tbsp lime juice
- 1.5 tbsp extra virgin olive oil
- 2 tablespoons reduced fat yoghurt
- Lime cheeks, to serve
- Fresh coriander leaves, to serve
- 20ml sriracha Mayo or chilli sauce (to serve)
Fish seasoning:
- 1.5 tsp Chilli powder
- 1.5 tsp Cumin
- 1.5 tsp Garlic powder
- 1.5 tsp Paprika
Method
- Preheat oven to 200 degrees. Line a baking tray with baking paper.
- In a bowl add the cabbage, extra virgin olive oil and 1 tbsp lime juice. Mix until well combined.
- In a separate bowl, combine the avocado, coriander, red onion and remaining lime juice. Mix until well combined.
- In a bowl combine spices and cost fish strips. Place fish on prepared baking tray.
- Bake in pre heated oven for 10 minutes turning half way.
- Top the tortillas with cabbage mixture, corn, fish, avocado, yoghurt, coriander and chilli. Drizzle sriracha mayo over the tortillas.
- Serve with lime cheeks and enjoy!!
