Low Fodmap Cranberry, Goji, Passion Cookies
Low FODMAP, low sodium, heart healthy (low saturated fat), vegetarian
Serves 12
Ingredients
- 1.5 cups gluten free flour (alternatively half the flour amount and replace with 3/4 cup of vanilla brown rice protein powder)
- 1 egg
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1.5 tsp orange zest
- 1/2 cup sugar
- 1 tsp vanilla extract
- 70g softened unsalted butter
- Fold through at the end:
- 1/2 cup dried cranberries
- 1/2 cup dried goji berries
Frosting:
- 1 tbsp passionfruit purée
- 1/2 cup pure icing sugar
Method
- Preheat oven to 180 degrees. Line baking tray with baking paper.
- In a mixing bowl add butter and sugar, using an electric mixer, cream butter and sugar until smooth and well combined.
- Add egg, vanilla and orange zest mix until combined.
- Add flour, baking soda and salt fold until combined.
- Fold dried cranberries and goji berries until evenly distributed.
- Using a tbsp roll into 12 balls and place on baking tray.
- Using your fingers press down each ball to create desired size.
- Bake at 180 degrees for 7 min or until sides are lightly brown and middle just set.
- Cool completely on oven tray.
- In a bowl mix passionfruit puree and icing sugar until well combined.
- Drizzle icing over cookies, top with extra cranberries and goji berries if desired.
