Low Fodmap Orange and Poppyseed Cake

low FODMAP, gluten free (suitable for coeliacs), low sodium, low saturated fat (heart healthy)

Serves 8

Ingredients

  • 2 tbsp poppyseeds
  • 2/3 cup lactose free milk
  • 2 cups Gluten free self raising flour or plain flour
  • 1.5 tbsp orange rind
  • 2 tbsp of juice of orange
  • 1/2 cup caster sugar
  • 2 eggs
  • 1/4 cup Grapeseed oil

Drizzle

  • 1/2 cup Icing sugar
  • 1 tsp orange juice (from orange)

Method

  1. Pre heat oven to 180 degree Celsius fan forced.
  2. Line cake tin with baking paper.
  3. Add flour into bowl, add caster sugar and mix until combined
  4. Add eggs, rind of orange, juice of orange, lactose free milk and oil.
  5. Mix until combined.
  6. Add poppyseeds, gently mix to combine.
  7. Spoon mixture into prepared tin.
  8. Bake in preheated oven for 25-30 minutes or skewer come out clean.
  9. In a small bowl mix icing sugar with juice of orange until a smooth mixture is achieved. Add more juice of orange if required and until desired taste is achieved.
  10. Once cake is cooled, spread icing mixture over cake
  11. Serve and enjoy!
