Low Fodmap Prawn Paella

Pescatarian, heart healthy (low in saturated fat), high in omega 3 fatty acids, low FODMAP, toddler and kid friendly

Ingredients

  • 400 g tin diced tomatoes
  • 1 tb tomato paste
  • 1/2 tsp turmeric
  • Few saffron threads
  • 2 cloves garlic, peeled (do not crush)
  • 300 g Arborio rice
  • 2 cups frozen prawns
  • 2 cups halved green beans
  • 1 cup frozen peas
  • 1 cup baby spinach
  • Olive oil
  • 750 ml water
  • Salt to season

Method

  1. In a large frypan, heat olive oil and garlic on high until aromatic
  2. Add tomatoes, tomato paste, spices, rice and water to pan. Bring to boil and then reduce heat to low. Simmer for 25 min or until rice tender and liquid absorbed
  3. Top rice mixture with prawns, peas, green beans and cover with a lid. Cook for a further 7-8 minutes or until prawns and beans are tender.
  4. Turn off heat, stir through baby spinach leaves and serve warm. Remove garlic cloves before serving.
