Low Fodmap Strawberry and Macadamia Slice

Low FODMAP (suitable for people with Irritable Bowel Syndrome), Vegan

Ingredients

  • ½ cup Macadamias, chopped
  • 2 cups Strawberries
  • 2 cups rolled Oats
  • ½ cup Chia seeds
  • 1/3 cup Pepitas
  • 2 tsp Vanilla essence
  • 2/3 cup Maple syrup
  • 2 tbsp Lemon juice
  • 1/3 cup macadamia oil

Method

  1. Cut strawberries in half. Add strawberries and lemon juice in a small saucepan over medium heat. Cook for 3 minutes or until softened.
  2. Remove from heat, add chia seeds and stir until well combined. Set aside to cool.
  3. Preheat oven to 120 °C fan forced. Grease and line a 20cm square cake tin with baking paper.
  4. In a large bowel combine oats, macadamias, pepitas and stir until combined.
  5. In a small saucepan add maple syrup, vanilla essence and macadamia oil. Over medium heat stir for 3 minutes or until mixture is well combined and heated through.
  6. Add maple syrup mixture to oat mixture and stir until well combined.
  7. In prepared cake tin add half of the oat mixture and press down with spatula to make even.
  8. Then spread the strawberry mixture evenly over the oat mixture in the cake tin.
  9. Spoon remaining oat mixture and press down evenly with spatula.
  10. Bake in preheated oven for 50 minutes or until golden.
  11. Leave to cool, cut into squares and enjoy!
