Low Fodmap Strawberry and Macadamia Slice
Low FODMAP (suitable for people with Irritable Bowel Syndrome), Vegan

Ingredients
- ½ cup Macadamias, chopped
- 2 cups Strawberries
- 2 cups rolled Oats
- ½ cup Chia seeds
- 1/3 cup Pepitas
- 2 tsp Vanilla essence
- 2/3 cup Maple syrup
- 2 tbsp Lemon juice
- 1/3 cup macadamia oil
Method
- Cut strawberries in half. Add strawberries and lemon juice in a small saucepan over medium heat. Cook for 3 minutes or until softened.
- Remove from heat, add chia seeds and stir until well combined. Set aside to cool.
- Preheat oven to 120 °C fan forced. Grease and line a 20cm square cake tin with baking paper.
- In a large bowel combine oats, macadamias, pepitas and stir until combined.
- In a small saucepan add maple syrup, vanilla essence and macadamia oil. Over medium heat stir for 3 minutes or until mixture is well combined and heated through.
- Add maple syrup mixture to oat mixture and stir until well combined.
- In prepared cake tin add half of the oat mixture and press down with spatula to make even.
- Then spread the strawberry mixture evenly over the oat mixture in the cake tin.
- Spoon remaining oat mixture and press down evenly with spatula.
- Bake in preheated oven for 50 minutes or until golden.
- Leave to cool, cut into squares and enjoy!
