Muesli Snack bars

Heart healthy (low saturated fat), low sodium, low sugar, diabetic friendly

Serves 16

Ingredients

  • 2 cups rolled oats
  • ½ cup nut butter (Tip: To make almond butter, roast 1.5 cups of almonds for 10 minutes then blend on high for 5-10 minutes, stirring every couple of minutes! This will make just over ½ cup)
  • 2 tbsp honey
  • ¼ cup of dried cranberries
  • ¼ cup sultanas
  • 1 cup cranberry sprinkle (mix of cranberries, pumpkin seeds, sunflower seeds, almonds, pinenuts and sesame seeds.
  • 1 egg, lightly beaten
  • 25g dark chocolate (optional)

Method

  1. Preheat oven to 160 degrees Celsius. Line baking tray with baking paper.
  2. In a bowl combine rolled oats, dried cranberries, sultanas and cranberry sprinkle, stir until combined.
  3. Make a well in the centre of the bowl.
  4. Add honey, egg and nut butter. Mix until the mixture is well combined.
  5. Pour mixture into prepared baking tray and press down firmly, making sure the surface is even.
  6. Bake in preheated oven for 15-20 minutes or until golden.
  7. Leave to cool completely. Once cooled cut into bar sized pieces
  8. Meanwhile, in a bowl add dark chocolate, place in microwave for 20 second intervals until melted completely.
  9. Drizzle the chocolate over the bars and leave to set.
