Muesli Snack bars
Heart healthy (low saturated fat), low sodium, low sugar, diabetic friendly
Serves 16
Ingredients
- 2 cups rolled oats
- ½ cup nut butter (Tip: To make almond butter, roast 1.5 cups of almonds for 10 minutes then blend on high for 5-10 minutes, stirring every couple of minutes! This will make just over ½ cup)
- 2 tbsp honey
- ¼ cup of dried cranberries
- ¼ cup sultanas
- 1 cup cranberry sprinkle (mix of cranberries, pumpkin seeds, sunflower seeds, almonds, pinenuts and sesame seeds.
- 1 egg, lightly beaten
- 25g dark chocolate (optional)
Method
- Preheat oven to 160 degrees Celsius. Line baking tray with baking paper.
- In a bowl combine rolled oats, dried cranberries, sultanas and cranberry sprinkle, stir until combined.
- Make a well in the centre of the bowl.
- Add honey, egg and nut butter. Mix until the mixture is well combined.
- Pour mixture into prepared baking tray and press down firmly, making sure the surface is even.
- Bake in preheated oven for 15-20 minutes or until golden.
- Leave to cool completely. Once cooled cut into bar sized pieces
- Meanwhile, in a bowl add dark chocolate, place in microwave for 20 second intervals until melted completely.
- Drizzle the chocolate over the bars and leave to set.
