Spiced Beef And Lentil Bake
Diabetic friendly (low carbohydrate), low calorie, heart healthy (low in saturated fat), low in sodium (suitable for people with hypertension)

Ingredients
- 400 g tin lentils, drained
- 1/4 cup dried cranberries
- 1/2 cup dried cous cous
- 1 tsp ground cinnamon
- 1 tsp all spice
- 1 tsp nutmeg
- 1/2 tsp whole cumin seeds
- 3 cups water
- 800 g lean beef mince
- 1 tb pine nuts
- 1 cup Greek yoghurt (to serve)
Method
- Combine all ingredients (except beef) in large baking dish and stir to combine into a thick mixture
- Add beef and stir to combine
- Sprinkle pine nuts on top
- Place in oven for 40 min covered with foil at 150 degrees fan forced
- Take foil off for another 10 min until pine nuts toasty and top of bake crispy and golden
- Serve with Greek yoghurt and greens
