Spiced Beef And Lentil Bake

Diabetic friendly (low carbohydrate), low calorie, heart healthy (low in saturated fat), low in sodium (suitable for people with hypertension)

Ingredients

  • 400 g tin lentils, drained
  • 1/4 cup dried cranberries
  • 1/2 cup dried cous cous
  • 1 tsp ground cinnamon
  • 1 tsp all spice
  • 1 tsp nutmeg
  • 1/2 tsp whole cumin seeds
  • 3 cups water
  • 800 g lean beef mince
  • 1 tb pine nuts
  • 1 cup Greek yoghurt (to serve)

Method

  1. Combine all ingredients (except beef) in large baking dish and stir to combine into a thick mixture
  2. Add beef and stir to combine
  3. Sprinkle pine nuts on top
  4. Place in oven for 40 min covered with foil at 150 degrees fan forced
  5. Take foil off for another 10 min until pine nuts toasty and top of bake crispy and golden
  6. Serve with Greek yoghurt and greens
