Tuna Nachos
High protein, low calorie, diabetic friendly, heart healthy (low in saturated fat), low sodium
serves 4
Ingredients
- 2 x 185 g tinned tuna
- 1/2 cup Greek yogurt
- 2 medium sweet potatoes, peeled
- 1 Lime (to serve)
- 1 tsp olive oil
- 1 avocado
- 1 tomato
- 1 red capsicum
- Fresh coriander
- 1.5 tbsp lime juice
- 1 red onion
- Salt and pepper to taste
Taco seasoning:
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- 1/2 tsp cumin
- 1tsp chilli powder
Method
- Preheat oven to 200 degrees Celsius. Prepare baking tray with baking paper
- Slice the sweet potato into even rounds. Place in bowl drizzle with olive oil and sprinkle 1.5 tsp of taco seasoning. Mix well
- Place chips evenly on prepared baking tray
- Bake for 30 minutes or until cooked through and crispy. Turning chips halfway through cooking time.
- In a bowl, smash the avocado, lime juice, onion and season with salt and pepper. Mix until well combined.
- In a bowl mix tuna with taco seasoning.
- Place potato chips into a serving bowl top with tuna, capsicum, tomato and coriander.
- Serve with smashed avo, Greek yogurt on the side or topped on the nachos
- Serve with lime wedges.
